Why 450°C Matters in a Countertop Pizza Oven

Neapolitan-style pizza needs serious heat. What 450°C actually does to a crust, why most home ovens cannot get there, and what to look for in a countertop pizza oven built for it.

A standard home oven tops out around 230–250°C. A Neapolitan pizza bakes at 430–480°C. That gap is the whole reason the countertop pizza oven category exists — and why the maximum temperature on the spec sheet is the number buyers ask us about first. What the heat does At 450°C, three things happen that lower temperatures cannot replicate. The crust sets and blisters within one to two minutes, giving the leopard-spotted edge Neapolitan-style pizza is known for. Moisture in the dough flashes to steam, so the base crisps while the interior stays soft. And toppings cook through in the same short window, instead of drying out over a long bake. Drop to 300°C and you can still make good pizza — but it is a different product, closer to a flatbread bake. Temperature is not the whole story A headline number alone does not bake the pizza. When you evaluate a countertop pizza oven, look at what sits behind it: - Precise control: NTC temperature sensing holds the cavity near the set point instead of swinging around it. - Separate upper and lower heaters: the top heat drives the crust and toppings; the bottom heat drives the base. Independent settings let each market tune for its style — Neapolitan, New York, thin and crispy, deep dish. - The stone: a pizza stone (14.6-inch / 37 cm on our 20L models) stores heat and pulls moisture from the base. A rotating stone configuration, available on selected models, evens out hot spots. - Preset programmes: frozen, wood-fired style, New York and other presets translate raw temperature into repeatable results for home users. Matching the oven to the programme Not every market needs the full 450°C. Programmes built around frozen pizza and family use may prioritise capacity and presets; programmes selling the Neapolitan story to enthusiasts should lead with maximum temperature and stone quality. DIAKING's countertop range covers 14L, 18L and 20L, with manual, digital and multifunction configurations, so the heat story can be matched to your price point.
